Today, we visited Torrefazione Cannaregio, an artisan coffee shop in Venice. Although the shop's ownership is based in Milan, all of the shipping is based out of the Cannaregio location. The walls are lined with beans, which are roasted in-house by a large gas-operated machine (the last of its kind!), which can be purchased in bags or made into drinks at the counter. Torrefazione also does business online, where recurring customers can order beans. While 80% of these orders are from outside of Italy, the foot traffic in the shop is split more evenly: 60% tourists, and 40% locals. The shop has buyers in various cities in Italy, and also sell beans to chefs who make their own brews.
This business is similar to Luigi Bevilacqua in that they both utilize machinery, as well as personal skill. Additionally, each company survived a recession in the mid-1900s, and was able to rebuild. These are the types of similarities and trends that we are looking for in our research!
