Ana Gabriela holds a Ph.D. in Food Engineering from the University of Campinas (UNICAMP), a Master’s degree from the Federal University of Paraná (UFPR), and a Bachelor's degree from the Federal University of Technology – Paraná (UTFPR).
She is currently a postdoctoral researcher at the Faculty of Food Engineering (FEA/UNICAMP), where she also teaches on the undergraduate Food Engineering programme. Her research focuses on the biotechnological valorisation of agro-industrial residues via enzymatic hydrolysis, aiming at the development of sustainable food ingredients.
Ana Gabriela has professional experience in industrial fermentation processes and in translating laboratory-scale innovations into industrial applications. She also has expertise in microencapsulation, emulsions, and in vitro cell culture.
During her doctoral studies, she undertook a research placement at Technological University Dublin and University College Dublin, where she collaborated with international research teams and worked as a laboratory demonstrator.

Danilo holds a degree in Biological Sciences (2016), a Master's in Applied Microbiology (2018), and a PhD in Cellular, Molecular Biology and Microbiology (2022), all from São Paulo State University (UNESP). He is currently a postdoctoral researcher focused on the production and characterization of oligosaccharides generated through the action of heterologously expressed xylanases and cellulases. His main areas of expertise include Microbiology, Molecular Biology and Enzymology. Over the past few years, he has been particularly dedicated to the purification and application of enzymes for the synthesis of high-value molecules, especially oligosaccharides.

Natalia has a solid academic background, including a degree in Genetics from the Universidad Nacional de Misiones, a diploma in Applied Statistics from the Universidad Nacional de Córdoba, and both a Master’s and Ph.D. in Genetics and Molecular Biology from the University of Campinas (Unicamp). She has expertise in molecular biology and microbial multi-omics, with a focus on Industrial Biotechnology for biofuel production.
She is currently a collaborating researcher at Unicamp and a scientific consultant at Leaf-Lesaffre, where she contributes to fermentation monitoring and population dynamics analysis under the supervision of Professor Andreas K. Gombert.
Beyond research, she serves as the leader of the PyLadies Bioinformatics community, where she volunteers to promote gender diversity in the field. Her interests also include science as a human endeavor, professional ethics, personal development, and education.

Tatiana holds a Bachelor's degree in Food Engineering from the Federal University of Paraíba (UFPB), and a Master’s and Ph.D. in Chemical Engineering from the Federal University of Bahia (UFBA). She is currently a postdoctoral researcher and collaborator at the LeMEb. Her research focuses on the development of biotechnological routes for the production of alternative proteins, including cellular agriculture and microbial biomass, as well as the design of enzymatic processes for the recovery of bioactive compounds and the development of functional foods. She has extensive experience coordinating applied research projects in partnership with industry and has worked in the brewing sector at companies such as AmBev and Brasil Kirin (Heineken). Tatiana also leads teams in innovation and technology development at SENAI CIMATEC, where she currently coordinates initiatives in health, biotechnology, and food tecnology.
