Stanford Railroad Workers in North America Project has a guide for teachers.

There is a 1988 Charlie Brown movie "Building of the Transcontinental Railroad" during a movie series on the "150th anniversary of the completion of the transcontinental railroad at Promontory Point, Utah, in 1869."  The films were “introduced by historians, film scholars and researchers, that attempted to put these historical events in perspective.
