Root Vegetable Soup

Ingredients

  • 3/4 Carrots - peeled and cubed
  • 1 large chopped onion
  • Tbsp Olive Oil
  • 2 Parsnips - peeled and cubed
  • 1 turnip - peeled and cubed
  • 1 pint of chicken or vegetable stock
  • Salt and pepper to flavour

The How to Bit

  1. Place your chopped onion in a pot with the Olive oil and cook the onions until soft.
  2. Add the vegetables and sweat them for a few minutes add the stock and bring to the boil.
  3. Turn to down to a simmer and cook until the vegetables are soft. Blend the vegetables until smooth.
  4. Add salt and pepper to taste and serve with warm from the oven bread rolls.
