There are many different types of projects you might choose to do in the herbal area.
First of all, research! Do your homework. What kinds of things did people used to do? Find out. Check your medieval resources. (PS, please use caution when replicating medieval recipes. We have learned a lot since then, and not all things done in the past were safe!) You might enjoy starting an A&S project, teaching classes on what you've learned, or just learning and researching. You can also start making herbal items to demonstrate your knowledge.
One thing you can do along those lines is to create items you'd like to give away. If you are learning how to make salves and balms, for example, you may end up with lots of little items! These are perfect to donate to baskets that will be presented to the Crowns. You can also give these out as personal gifts.
Another idea for how to participate is A&S competition projects. If you have really honed in on something, it might make a good candidate for such a project. You would take this to any A&S Faires you attend through the year as you progress in your knowledge and work on the item. For example. I started with a simple plantain oil, and described what it was, how it was used, and how it was made. By the end of the faire year, I had added more research that branched out several to related threads, and even expanded my display to include a salve made from the oil.
And of course, you might enjoy making things to keep and use at home. Sometimes having friends or family help you test out something new you've made is a great way to decide if it's enjoyable enough to distribute through largess, or selling, etc.

TIP! If you're putting stuff into gift baskets that will go to the Crowns, PLEASE be sure to check the list and see if there are any known allergies. You might find some preferences there too that help to inspire your project!
