We were using coinpayments.net as payment processor. It was fine, we could easily support many currencies but then they decided to go Gestapo on us and force KYC if we want to continue to use them. I saw that it was necessary to do it ourselves and tried to install a bitcoin node on a Raspberry Pi, but the geekiness defeated me. At the same time I was arguing with a service provider about the hideous commission charged by Bitpay (10% and then you still have to pay the network fees!) and found an alternative for them, which it turns out may be be suitable for us too. It's called btcpay.

For each coin we support we will need to run a full node of that currency. Despite being a lot of work it's a good thing in the long term, meaning we own our own payment processors and are not beholden to anyone else's whims. If we can get the btcpay server working, a side-benefit is that with that knowledge our friends will be able to also run their own payment gateways for any stores etc they want to set up.
