French Onion Soup

Eileen's Favorite Onion Soup!

Ingredients

2 lbs onions

2 tbsp butter

2 tbsp olive oil

salt & pepper

4 cups college inn beef broth

1 cup water

2 tbsp flour    

2 tbsp brandy

french bread

montery jack cheese

Preparation

Slice onions thinly - heat butter and oil over medium heat in large pot.  Add onions, 1 tsp salt and 1/2 tsp pepper.  Cook until onions soften (10 mins)  Reduce heat & cook until onions carmelize - about 1 hr & 15 min.

Stir in flour & bring to a bubble.  Cook 2-3 min.  Slowly stir in beef stock, water & brandy.  Simmer for about 15 min.  Taste and season.  Heat oven to 325 degrees.  Cut bread into 1" slices, bake until dry (approx 6 minutes per side).  Heat broiler, grate cheese.  Pour soup into bowl.  Top w/bread & cheese.  Broil for 2-3 min.
