Ingredients
Cake
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
3/4 cup unsweetened cocoa powder
1 3/4 cup sugar
1 cup vegetable oil
1 cup Kahlua
1/2 cup milk
1/2 cup black coffee
2 eggs
1 teaspoon vanilla extract
Frosting
6 cups powdered sugar
2/3 cup butter, softened
1 1/2 teaspoons vanilla
5 teaspoons Bailey's
4 teaspoons milk
Instructions
Preheat oven to 325 F.
In a large mixing bowl, sift together dry ingredients. Add oil, Kahlua, milk, and coffee. Mix at medium speed until ingredients are incorporated (about 2 minutes). Add eggs and vanilla and beat for 2 more minutes.
Pour batter into cupcake pan with liners until about 1/2-2/3 full. Bake for 20-25 minutes, or until the toothpick comes out clean. Cool completely before frosting.
While cupcakes are cooling, combine powdered sugar, butter, vanilla, Bailey's, and milk in a medium mixing bowl. Beat on medium speed until ingredients are incorporated. Add more milk if the frosting is too thick.
Frost cupcakes. Garnish with extra cocoa powder if desired.
