Ingredients
1 bunch of asparagus
2 tablespoons of olive oil
2 cloves of crushed garlic
2 tablespoons of lemon juice
Salt
Pepper
2 eggs
1 tablespoon of vinegar
2 tablespoons Parmesan Cheese (optional)
Instructions
Preheat oven to 400 degrees.
Chop off the bottom inch of the bunch of asparagus.
Spread asparagus out on a cookie sheet. Top with olive oil, crushed garlic, lemon juice, salt, and pepper. Using your hands ensure each stalk is coated with the mixture.
Cook in the oven for 15-20 minutes (or until desired firmness), moving around the asparagus halfway through.
While asparagus is cooking, fill a pan with water until about 1/4 inch from the top rim. Add vinegar. Bring to a simmer.
Create a gentle whirlpool with a slotted spoon. Crack and drop the eggs into the whirlpool one at a time (this prevents them from sticking to the bottom of the pan).
Cook 5-7 minutes, or until egg whites become opaque.
Top asparagus with poached eggs. Add Parmesan cheese, salt, and pepper.
