Perfect Hollandaise Sauce

Serves 2-3

Ingredients

  • 4 tablespoons butter

  • 2 egg yolks

  • 5 tablespoons heavy cream

  • 4 teaspoons lemon juice

  • Salt and pepper

Instructions

  1. In a small saucepan melt butter over low heat. Take the pan off the heat. Let sit for 3-5 minutes.

  2. With the pan still off the heat, add egg yolks, cream, and lemon juice, whisking constantly. Add salt and pepper to taste.

  3. Put the pan back on low heat. Stirring constantly with a wooden spoon, cook until sauce thickens. The sauce should be able to coat the spoon and hold its shape when running a finger down the back of the spoon, like this:

Note: Do not be afraid to take the sauce off the heat while testing. Those few seconds can literally make or "break" your sauce.
