Linguine and Clam Sauce

Makes 2 servings

Ingredients

  • 1/4 cup olive oil

  • 3 cloves of crushed garlic

  • 1/4 teaspoon oregano

  • Pinch of crushed red pepper flakes (to taste)

  • 2 cans chopped clams

  • 3 tablespoons fresh chopped parsley (I used 5 frozen cubes or about 2 tablespoons dried parsley)

  • Pepper

  • Cooked linguine (or spaghetti)


Instructions

  1. Saute garlic in a frying pan with olive oil.

  2. Add oregano and red pepper flakes to flavor the oil, but do not brown the garlic.

  3. Add parsley and clam juice. Let simmer for about 3 minutes.

  4. Add clams and pepper. Let cook for 3 minutes.

  5. Serve over linguine.
