Ingredients
2 cups chickpeas drained
1/4-1/3 cup lemon juice
1/4-1/3 cup Tahini (sesame paste)
2 cloves of garlic crushed
1/4 - 1/2 cup of water (cold from the fridge)
1/2 teaspoon salt
(optional 1/2 teaspoon of cumin)
For Serving
Red paprika
Handful of chopped Parsley
A few chickpeas
Serving sauce (you can also mix it with the hummus)
1 small serrano pepper cut finely
1 clove of garlic crushed
3 tablespoons of lemon juice
Olive oil
Instructions
Put 1 cup of chickpeas with the lemon juice in the blender, and pulse few times until the mix is puree. After adding the lemon and blending. Add ice cold water to the mix to become creamy. Add Tahini (the same amount Lemon juice used).
For the sauce, if you desire to serve it separate, then mince the pepper and garlic using mortar and pestle and the lemon juice at the end. Otherwise, you can add the ingredients to the blender.
Serve in shallow bowl and add few chickpeas, parsley and paprika. Add a whisk of olive oil and some of the garlic pepper sauce on top.
