Kumquat and Pink Pepper Spritzer
Makes 2-3 (8-ounce) drinks
1/4 cup water
1/2 teaspoons dried pink peppercorns, lightly crushed
About 6 kumquats, sliced into rounds and seeded
Ice (optional)
About 1/2 liter soda water
Boil water. Stir in pink peppercorns, remove from heat, and let stand for 30 minutes. Strain syrup through a fine-mesh strainer and reserve pink peppercorns for garnish. Let syrup cool completely.
For each drink, muddle 12 kumquat slices and 2 tablespoons of syrup in an 8-ounce glass. Add ice cubes if desired, then fill glass with soda water and stir. Garnish with a few pink peppercorns.
Sangria
Serves 2
1/2 cups boiling water
1/2 black tea bags (or 2 teaspoons loose-leaf tea in an infuser)
1/2 cinnamon sticks
3/4 cups pomegranate juice
1/4 cup freshly squeezed orange juice
1/4 orange, sliced into thin rounds
1/4 lemon, sliced into thin rounds
1/4 lime, sliced into thin rounds
1/4 apple, cored and cut into 1/2-inch chunks
3/4 cups carbonated water
Pour boiling water over tea bags and cinnamon sticks and steep for 5 minutes. Discard tea bags. In a large jar or pitcher, combine tea, cinnamon sticks, pomegranate juice, orange juice, orange, lemon, lime, and apple. Refrigerate for at least 1 hour and preferably overnight. Just before serving, stir in carbonated water. Serve in glasses over ice.
