Split Pea Soup

This is one of our favorite meals and we have it often. Great taste, great fiber, and low calories. Each ladle of split pea soup is only 130 calories. We have this everytime we have a late afternoon spin class, or the kids have an evening activity.
Ingredients
• 16 ounces dried split peas
• 6 oz diced turkey bacon
• 1 cup diced carrots
• 1 medium onion, chopped
• 2 garlic cloves, minced
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• 7 cups boiling water
• 1 Tbs chicken base
Preparation
Dissolve chicken base in boiling water.
In a slow cooker, layer the first nine ingredients in order listed (do not stir).
Cover and cook on high for 4-5 hours or until vegetables are tender.
(Can substitute chicken broth for water & chicken base.)
