There are in fact a number of shuks or markets in the Old City. Essentially the Cardo, the main north/south street from the Damascus Gate to the Jewish Quarter is one long (in some places three parallel) market. As you walk along you can see the different items being sold.
In the first section in the Muslim Quarter the market is for the local Arab population and the items being sold are those for everyday needs.
As one nears the Jewish Quarter, the number of tourist shops increases dramatically.
The markets in the Christian Quarter are almost entirely given over to the tourist trade. Again, the items sold will reflect the typical customers. There is a lot more Christian merchandise in the Christian Quarter.
