In general, my foods modules last approximately 3 weeks. I break up the knowledge requirements for the course into 3 parts and then have appropriate recipes for each topic every week. The senior foods modules I have created are based off what what will give the students the most complete culinary experience. For students who want to pursue the culinary arts when they graduate, they should have a fairly good range of abilities by taking on these modules.
In the past, I have apologised to students in grade 10 for the fact that their modules are so boring, but I have recently come to the realization that the FOD 1010 and FOD 1080 credits will essentially allow you to cook (almost) anything, especially if you want the credit to continue for 3 weeks like I do. This gave me the opportunity to allow students to research their own recipes and prepare an ingredient list (available on the Foods Forms page). It made it so that I had a lot more shopping to do since each of my groups were preparing different dishes, but the kids were a lot more excited about what they were making and I stopped getting the annoying "what are we making in foods today" question from 20 kids...
