As assigned, be able to compile information about the food ways and cultural practices of specific cultures along the Mekong: in China (Tibet and Yunnan), Lao PDR, Thailand, Cambodia and Vietnam but excluding Myanmar. Be able to compose this information into a logical, compact presentation on a culture’s food ways and cultural uniqueness.
Assignments:
Students will compile very specific recipes for production of at least one food dish that is considered to be characteristic of each of the major cultures within the Mekong region. Select one of these dished and try to make it to share in class. Photograph the raw ingredients, the production process, and the final product, then place the photo essay into the assignment page as a Picasa slide show.
Define the terms "home range" and "cognitive mapping."
For the next class you will need to find and read an article on differences between foods in SE Asian cultures. This should basically be a paper that contrasts communities or cultures in some way based upon their crops, foods, or food processes. This will be briefly presented in class.
