If your oven sits outside for a long time, you may start to notice the flame no longer sounds like a jet. It may be time to clean the burner
If you look at the photo above ( after the top, the shield, the stone and the metal platter have been removed, you see the burner, with a small bolt head in the top of the burner.
There is a nut at the very bottom, under the metal shelf. Unbolt the bolt and remove it, and try to keep track of the nut, though usually it just falls down to the next metal shelf.
You want to take out the center disk, this is a photo from Tampa showing the underside of the center disk

Note that the burner assembly will be loose, but does not actually come out, so you may need hanger to pry out the center disk. On mine, the underside of the center disk usually has some rust build up, and some has fallen into the burner assembly. ( Again, I keep mine outside in a humid environment, so the YMMV as to rust build up ) I wire brush the underside of the center disk, and the matching area of the burner assembly, then use a vac to get out any loose particles of rust in the burner assembly. Then put back the bolt and nut, and good to go for a year or so.
We had at least one poster who owned their BS for a long time, and the flame no longer roared like a jet - he took the burner assembly apart, brushed off the rust, and it was good as new.
