Some users prefer to stop the rotation of the platter to load a pie. Since the burner throws out a ton of heat, and can warp the platter if it in on full blast, you want to minimize the time the platter is not moving. One solution is to wire a switch to the rotis motor, and put the switch on the front of the BS. My procedure is to plug in the rotis motor, make sure the platter is turning, then open the propane tank, and fire up the burner. Once the lower stone is at temp, I turn the burner to low, then flip the switch to turn off the motor, load the pie, then turn the burner back up to the appropriate setting. I don't turn off the platter when retrieving the pie, though if you did, I would follow the same procedure.
