Anna's made these lots of times, and they've become her absolutely go to recipe for brownies. It's become traditional to make them every Holy Saturday in preparation for breaking Lent :)
225g chocolate (half milk, half dark, use own-brand; it melts better)
170g melted butter
250g caster/soft brown sugar mix
2 eggs
2tsp vanilla extract
95g plain flour
30g sifted cocoa
½ tsp salt
1. Preheat over 180°C and line 8” square tin with baking paper
2. Chop chocolate into chunks. Melt half in microwave, stirring every 30sec.
3. Melt the butter. Whisk the sugar and butter together.
4. Add the eggs (ensuring mixture is cool enough), and vanilla and whisk for 2-3min.
5. Whisk in melted chocolate (ensuring chocolate isn’t too hot and will scramble eggs).
6. Sift in flour, cocoa powder, and salt. Fold in dry ingredients, not overmixing in order to keep the brownies fudgy.
7. Fold in remaining chocolate chunks
8. Put in baking dish and cook for 20-25min. Take out of oven when knife comes out slightly fudgy. Leave to cool in tin.
