One of Anna's favourites, that she's made for mum and dad :)
Serves 4
30g of Fresh Mint
100g of Pine Nuts
2 Lemons
200g of Kale
1 Red Onion
1 Garlic Clove
3 tablespoons of Tahini
80g of Pomegranate seeds
3 or 4 sweet potatoes
225g of Halloumi
1. Cut the sweet potato into cubes. Cut 1 red onion into chunks. Drizzle with olive oil and season with salt and pepper in baking tray and roast for 30min at 180°C.
2. Dressing: Add tahini, crushed garlic, the juice of a lemon, salt, pepper and a tablespoon of olive oil. Mix everything together. Add warm water until you have a thick, creamy consistency. Set dressing aside.
3. Toast pine nuts in a frying pan with no oil watching them carefully. Set aside.
4. Steam kale until cooked through (7 - 8 minutes) and set aside.
5. Cut Halloumi into slices. Fry with olive oil, on high heat, turning over when brown.
6. Mix everything together and add the pomegranate seeds, chopped mint, and dressing.
