Stuffing made by Anna twice now for Christmas Day (2018/19). Incredibly simple and delicious.
Ingredients:
1kg sausage meat
500g cooked chestnuts
3 sticks celery
Double cream
2 packets fresh sage (maybe 30g?)
Method:
1. Finely dice the celery.
2. Chop the chestnuts
3. Chop the sage
4. Add all ingredients into the mixing bowl with the sausage meat
5. Mix together
6. Add enough double cream to make it all bind together (I probably used about 50ml)
7. Add plenty of salt and black pepper.
8. Line a roasting dish (I used one 8x11 inches but you could use a loaf tin) with baking paper and put in the stuffing
9. Cook at 180 for roughly 90min until the top is nice and brown (will need longer to cook probably if it's in a loaf tin).
