Not everyone gets invited to interview. If you haven't been invited for an interview it doesn't meant they don't want you, it just means that your university or course don't do them.
But there are still a large number of interviews taking place each year, particularly for courses leading to the healthcare professions and for the most competitive subjects at the most competitive universities. Things are a little different than they were Before Covid, with most interviews taking place by video link rather than in person. However some have now moved back to being in person.
Whether your interview is face to face or online you should be prepared to face elements of an MMI - things like scenario handling and ethical questions - as part of your interview process.
