Ms. Aud's Kusina

One of Ms. Aud's favorite ways to learn more about different cultures is through food! "Kusina" is how you would say 'Kitchen' in Tagalog, which is the national language of the Philippines (where Ms. Aud's family are from). Here are a few videos of Ms. Aud cooking dishes from different countries, along with the recipe if you would like to try at home. Stay tuned for more!

Tita Tine's Lumpia

Tita Tine (Tee-tah Teen) is Ms. Aud's mom who makes the most scrumptious Filipino eggrolls that are always a hit at any get-together. Tip: To make this vegetarian, simply use tofu instead of beef, and find a veggie bouillon cube to use in place of the beef bouillon!

Mana'eesh Zaatar

Mana'eesh or Manakeesh are flatbreads eaten daily by Arabs during breakfast or lunch. Za'atar is one of the most popular toppings and it includes dried thyme, sumac, sesame seeds and other spices mixed with olive oil, spread on top of the flat bread. You could make the za'atar or purchase from most grocery stores that have a variety of spices. Ms. Aud's Palestinian friend who sent her this recipe said you could enjoy Mana'eesh with eggs, hummus, and a salad for breakfast/brunch! This recipe is from Joudie Kalla's cookbook 'Palestine on a Plate.'

Japchae

Ms. Aud filmed a video making Japchae which is a delicious Korean noodle dish. This sweet and savory dish often has seasoned meat, but you can also make it completely vegetarian like Ms. Aud! She doubled the amount of eggs and added more vegetables so it has extra crunch and nutrition. See the full recipe from Seonkyoung Longest here!
