Serving canapés and hors d'oeuvres can be a challenge, but the service should match the occasion. Very formal occasions often warrant butler service -- complete with black trousers or skirts, white shirts with black bow ties, and light-coloured jackets.
However, most occasions are less fancy and can be buffet-style. A buffet is a self-service style where the guests serve themselves. This style is a great method for feeding large numbers of people with minimal help. The dinner buffet is the most practical and congenial way in which to care for your guests. There are many variations of the Buffet Service.
Butler Service
In the butler service, small trays are carried around to guests by servers. Guests may have been given small plates with dainty serviettes (napkins) earlier -- or the server may have serviettes in one hand and the goodies in the other.
Buffet Service
Hors d'oeuvres are arranged neatly on platters on one or more tables and guests help themselves. Serviettes should always be provided. Small plates are advantageous because guests may wish to take a variety of the canapés or hors d'oeuvres with them while they mingle.
Hors d'oeuvres should be only large enough for one or two bites. If the food is wet or greasy, cocktail picks and small plates with dainty serviettes (napkins) should be provided.
