It's best to submit all essays, even those listed as optional or recommended.

Depending on the university, your essay will need to be no more than 650 to 750 words max.  The introduction should include a hook to grab the reader's interest, and you should use specific details in the body of your essay to illustrate your main ideas.  Wrap up with a strong conclusion.

Additional Essay Requirements:

Often universities will require additional writing responses, sometimes called writing supplements or short essays.  Make sure you're checking each college's application requirements, including major-specific requirements, so you know what writings are required.
