Chunky Chocolate Cookies

Ingredients

  • 125g unsalted butter

  • 100g caster sugar

  • 75g soft light brown sugar

  • 1 medium egg, lightly beaten

  • 2 tsp vanilla extract

  • 150g plain flour

  • ½ teaspoon baking powder

  • A pinch of sea salt

  • 100g dark chocolate, chopped into smallish chunks (or use milk chocolate if you prefer this)

(makes 14-16 cookies)

Method

  1. Preheat the oven to 190°C/gas mark 5

  2. Gently melt the butter in a small saucepan.

  3. Put both sugars into a mixing bowl and pour in the melted butter. Beat the mixture well with a wooden spoon.

  4. Add in the egg and vanilla and mix well.

  5. Sift the flour, baking powder and salt into the bowl and stir to combine before adding the chocolate. The mixture should be quite sloppy.

  6. Using a dessert spoon, dot the mixture onto two baking sheets lined with baking parchment. Leave at least 4cm in between each one as they do tend to spread out.

  7. Place in the oven and bake for 8-10 minutes or until the cookies are pale and golden.

  8. Remove the cookies from the oven and transfer to a wire rack to cool completely.

Cookery Club

This week, the children learnt about accurate measuring and this came in very handy when we were making the chocolate cookies. We will be looking at measuring again next week. The children did really well this week and thoroughly enjoyed making (and eating) this recipe!
