See below are some ideas for this project.
Take either a close-up photo of yourself, a friend, or find a close-up shot of a famous person online. Use the pen tool to trace the image and fill in the outline with color. Concentrate on shading techniques to make the image as life like as possible. Pay attention to detail on how light is cast upon skin and clothing.
Checklist
Take a picture of yourself or a friend, or download a picture of a celebrity.
The image you create can be in any style (cartoon, abstract, etc…)
Put both images (original and the Illustrator created) next to each other.
Create a Colorful Polygonal Animal by selecting an image of animal online and then using polygonal shapes and triangles to design a colorful animal shape recreation. Challenge yourself to include gradients, feathering, or transparency.
Choose either a book, a video game, a movie, or TV/Netflix series. You will need to look up the original cover/poster to use as inspiration for what you'l be drawing. You will create a minimalist version with the least amount of elements possible that still communicates the book, tv series, video game, or movie clearly to your audience. Focus on attention to detail since everything is minimized down to a select few objects, don't rush with the Pen Tool.
You know all about the logo cration. If you decide to do this one, be creative! Do not just do the ordinary, get outside of the box!!!
Start from an initial sketch, and try to finish a piece of Illustrator artwork by using paths.
