Meet a very successful ex Dalle Laste student: chef Marco Zampese!

Allegra: One day, a few weeks ago, our English teacher (Mrs Chiara Zorzo) told us about Marco Zampese, a young head chef that works in a 3-Michelin-star restaurant in London, who was a student at our school! We were all impressed by this, but even more when the teacher told us we were going to interview him. We immediately started proposing questions we could ask to Marco Zampese in the interview. We were very excited about it, since a person who attended our same school is now famous!!!
After writing down a lot of questions on Friday 7h may we finally interviewed him. He was really nice and gladly answered all our questions, the interview went really well. Here are only some of the questions our class has asked him:
Where did you study, after scuola media? After middle school I went to high school in Castelfranco: hotel management; and then I went to University of Padova to study Science and culture of gastronomy.
How did you discover your passion for food and cooking? My family, since I was a kid, always loved to cook for our friends and I would help them in the KItchen.
What’s your favourite dish to make? My favorite dish to make is a starter with langoustine, melon, caviar and we put an asian sauce.
Why did you decide to go to London
The main reason was to learn to speak English, it was so difficult the first times; Then because in London there are many high level restaurants, and my goal was to work in one of these restaurants. It is a city that opens the door to the entire world. From London you can go easily to America, Australia, Asia, anywhere...London is a very good city where to start a career.
How did you become successful? Did you have to study hard?
I needed to work a lot and study hard and, if I were you, I would study as much as possible while you were young, because the more you study now, the more doors you can have open.
You need to be very patient. It's also very important to make mistakes, because you learn from the mistakes you make. And after that, whatever your passion is, you have to learn from the best (professionals).
What is it like to be the head chef of a 3-star restaurant?
It’s very complicated because we have more than twenty chefs in our restaurant, so I need to follow these guys. There is so much pressure, because the guests at our restaurant pay like 2/3/400 euros for one single dinner (you have sometimes guests that spend like 10 000 euros for a bottle of wine). I need to be sure that everything is perfect. It can happen sometimes that I scream and shout,but I try to contain myself.
How did the staff react when the restaurant got the 3 Michelin stars?
It was like winning a world cup for a football player. It’s a dream. Think that around the world there are only 135 3-star restaurants and this year we are one of them. It was incredible, it was crazy! For one week I couldn’t sleep. It was a big emotion for everyone.
Have you ever met famous people in your restaurant?
Yes,quite a lot actually,as an example,Victoria Beckham, David Beckham, however most were politicians,football players,artists.
Emma: This interview helped us to understand how studying leads not only to personal and intellectual growth, but also to the realization of one’s dreams.
We understood that all jobs are difficult and require great physical or mental commitment.Nothing is as simple as we think.There are difficulties for everyone,no one is born already a winner, that medal must be earned.
Even Marco Zampese has fought so hard to get where he is now,we must take him as an example.
But if working is difficult and boring,why is Marco Zampese a chef?
Because he has a passion: cooking is his world, we too in our future must be able to find the perfect job, what we are passionate about, what we do best and what we like.
For this, working for 14 hours in a Kitchen for Marco Zampese is not an obligation, but a pleasure.
