As more and more Americans are eating out, students in the Culinary Arts program are learning what it takes to prepare food and manage food service operations in restaurants and other institutions – from purchasing to preparation to presentation.

Using commercial kitchen equipment in the Highlander Restaurant, students cook food from scratch and serve in an appropriate manner. The restaurant is open to students and the general public. Remember, this program is more than a cooking class. Food service management, safety and general hospitality are significant portions of the program.

The Culinary Arts program is housed at Howell High School and is open to all Livingston County juniors and seniors. Internships at area restaurants and catering facilities are also available to add to student’s expertise. College credit and “Serv Safe” food handlers certification are available to qualifying students.

Students in the class may train to enter a fine culinary arts school, study hotel / restaurant operations or enter the hospitality and culinary field directly. Creativity, self-motivation, attention to detail, and a desire to work in a service industry are important attributes for the successful culinary student.

Year 1 Course Description

This program will prepare students for a career in Culinary Arts. Through integrated classroom

and hands-on kitchen experiences, the student will be prepared to perform at an entry-level in the industry. During these two years, the student will receive necessary training in the classroom in many academic disciplines as well as the kitchen. Students will also have a chance to expand their education by training through various experiences outside of the classroom. Successful completion of this Tech Prep Program can lead to college credits while still in high school.

Students will work in the classroom lab of The Highlander Restaurant. Students will learn by rotating through areas of restaurant operations including front of the house and back of the house.

The goals of this program are to prepare students for an entry level position in the hospitality industry and pre-preparation of students for a college, post-secondary, and or technical school.

Students will learn these skills:

  • Cost control and culinary math

  • Culinary Core

  • ServSafe and Sanitation

  • Career and Professional Development

  • Guest Relations

  • Basic Cooking

Year 2 Course Description

This program will prepare students for a career in Culinary Arts. Event Participation

Students will be required to attend a minimum of two events throughout the school year.

Students will be given notice prior to the events in order to make arrangements with their schedule.

Evaluation

Evaluation for Culinary Arts is determined by evaluating competencies in both Skills and Academic areas.

Prerequisites

Recommended that students take Nutrition and Culinary Arts 1 and 2 before enrolling in Culinary Arts/Highlander Restaurant.

Certifications

Students have the option to earn a ServSafe Certification. In addition: 4th Math, Visual Performing Applied Arts, 2nd Global Language, 3rd Science
