RECIPES! Hawai‘i-Based & USDA-Reimbursable
This Guidebook contains 19 recipes total for breakfast, lunch and side dishes compliant to USDA nutrition requirements (NSLP & SBP)! These are keiki-approved, taste tested with adults and students using Kauaʻi sourced taro, fruits, and vegetables. Kalo to Kula is a program of Mālama Kaua‘i.
The Farm to Early Care and Education (Farm to ECE) recipes and guidance in this book are focused on ages 3 to 5 for the Child and Adult Care Food Program (CACFP). All DHS licensed preschools and family day care home providers in Hawaiʻi are required by Hawaiʻi Administrative Rule to follow the CACFP meal pattern and portion sizes.

Beginning in 2017, Kōkua Hawaiʻi Foundation (KHF), a local environmental education nonprofit organization, conducted comprehensive cafeteria waste studies in schools piloting the Hawaiʻi DOE School Food Service Branch (SFSB) ʻAina Pono Farm to School program. In late 2019, KHF designed and executed a school food and milk waste audit study in 9 of the 15 public schools on Kauaʻi island, supported by Mālama Kauaʻi and Zero Waste Kauaʻi. This waste study serves as a reference of school lunch waste that can be used as the baseline for future farm to school planning efforts.
