Different types of flour are made by separating parts of a grain kernel in the milling process
Grain dust is the main source of fuel for explosions in grain handling
Workers in the milling industry may be exposed to unhealthy levels of airborne contaminants, including molds, chemical fumigants (toxic chemicals), and gases associated with decaying and fermenting silage (OSHA.gov)
King Arthur Flour is an employee-owned, value-driven baking company. They devote themselves to making the best flour on the market by maximizing sustainability and worker welfare. King Arthur Flour uses progressive and sustainable practices by involving farmers in all aspects of flour production and limiting pesticide exposure. They focus on regenerative agriculture and organic farming.
What is Regenerative Agriculture?
Regenerative agriculture is a way of farming that focuses on healing and restoring the planet. Rather than thinking of agriculture as being a part of the climate problem, King Arthur Flour uses practices that benefit the environment, such as minimizing tillage, ensuring healthy soil, and limiting fertilizers. Not only does regenerative agriculture tend to the planet, but also to the people producing each product. Dr. Stephen Jones, Director of Washington State University’s Breadlab, says, "[regenerative agriculture] is sort of the ultimate version of sustainability".
"We believe that the movement of regenerative agriculture is a philosophy"
Interview with King Arthur Flour
I decided that if I wanted to learn more about the company and its strive towards sustainability, an interview was crucial. Although I did not get to meet the King himself, I interviewed a corporate social responsibility manager named Molly Lawrence, who taught me all about the company's mission and regenerative wheat:
King Arthur Flour does not own their own farmland
They work with mills throughout the country and buy flour from different mills to meet certain protein specifications
Certified benefit corporation
Responsibility to ensure that they are not worsening the climate crisis
Discovered through a study that the biggest emissions were through the agriculture supply chain
Must ensure that all flour is being farmed in a way without chemicals and emitting as many greenhouse gases into the atmosphere
