Tested two designs:
Design 1: Larger field of view, smaller magnification
Experimental results:
resolution of image was not good enough for image processing
OK field of view
Design 2: Smaller field of view, larger magnification
Experimental results:
resolution of the image was perfect for image processing

Conclusion:
Using the smartphone's image sensor for this purpose is limited. Because we are working with off-the-shelf lenses, having a larger field of view with a large magnification is nearly impossible to accomplish.
Both designs, despite Design 1 having a larger field of view, are very, very sensitive to hand tremors. Difficult to get a good image of the sensor, without capturing multiple images through video.
Changing design requirements, from "hand-held", to stationary.

Purchased and assembled optical setup from Thorlabs (Zijun, Winnie)

Captured good fringes, but not by "freestyling"
Designed a casing for the setup with a locking ring mechanism (Andy)
