Ideal if device could be left on IV pole throughout set up and operation
Clearance between plates can probably be 2.5 inches
Any levers on the device should be made to go in a downward motion
Prefers linear slider over scissor jack because scissor jack has a lot of pinch points

Build prototype early in order to allow assembly and troubleshooting of problems and to move on to a different prototype if need be
In the pictures of the prototypes, insert an actual model of the IV bag to be more clear about what you are squeezing
Describe more clearly the needs of your device early on
What is the mechanism to squeeze bag (spring force or other force)
How is the device held open when an IV bag is being inserted or removed

Does the device have to be mounted on an IV pole or could it be mounted to the bed?
A lever may be a good way to get the device open.
For the wedge idea, a handle could make it more user friendly
