The Laboratory of Molecular Enzymology studies the relationship between the structure and function of enzymes, which serve as biological catalysts, and applies this knowledge to practical research. Our research focuses on carbohydrate-active enzymes involved in the degradation and synthesis of carbohydrates. Using kinetic analysis, protein engineering, and structural biology, we identify the structural determinants—such as amino acid residues and sequence elements—that control enzymatic function. Understanding these determinants enables the development of engineered enzymes capable of producing useful and novel carbohydrates. Such carbohydrates have potential applications as food ingredients, functional materials, and nanomaterials in the fields of food science, pharmaceuticals, and cosmetics. In addition, elucidating enzyme–inhibitor interactions contributes to the development of new pharmaceuticals and functional foods.
