Leo Parker IV 2019

Leo is originally from South Pasadena, California, but has lived in Carlisle, Pennsylvania; Berlin, Germany; and Portland, Oregon. During his collegiate career, he studied environmental studies and history at Reed College. He comes to Delta County as a Farm-to-School Coordinator with experience in environmental non-profits and education. He is looking forward to becoming acquainted with the Western Slope of Colorado and helping create and refurbish school gardens.  In his free time, Leo enjoys playing soccer, hiking, reading, and traveling!

Miranda Vincent 2019 & 2022

Miranda is a local Delta resident. She earned her A.A.S. in Sustainability Agriculture in 2018 from Colorado Mesa University with certificates in Entrepreneurship, Business, and Sustainable Agricultural Land Management. She has worked with all age groups throughout her life, started her own family jewelry business, and is a Farm to School Educator alumni. Miranda enjoys spending time outdoors, hiking with her family, reading, and helping improve others' life by being more self-reliant. She is working with Delta County School District as the Farm to School Garden Educator. During her time as a Farm to School member, she will be maintaining 8 gardens, facilitating farmers markets and summer camps, and teaching K-5th grade nutrition and agriculture lessons during the school year and throughout the summer at one of our many garden clubs.


Griffin Morin 2020

Griffin was born and raised in beautiful Southern Maine, but has spent most of the past five years living in Washington, D.C., studying psychology at George Washington University and working in healthcare. Griffin’s passion for sustainable living, education, and nature have led him to Delta County as a Farm to School Educator. He is excited and inspired to help improve the schools’ gardens and serve with members of the community. With his free time, he enjoys hiking, sports, cooking, kayaking, listening to music, and spending time with friends. 

Kathia Gonzalez 2021

Kathia was born and raised in El Paso, Texas, a border city to Ciudad Juarez, Mexico. In the city it was hard for her to be in contact with nature. She however, was passionate about her surroundings and how they impacted the environment. Therefore, she got a B.S in biology with a concentration in Ecology and Evolution. After graduation she got a seasonal position with the Forest Service in New Mexico. Kathia did threatened and endangered species surveys. After that she worked for Audubon in Santa Fe, NM as a conservation intern assisting the environmental educator teach nature classes to kids from K-5 and helping with educational programs for the public. Kathia then wanted to pursue a career in Environmental Management thus applied to Western Colorado University where she is a a first year graduate student in the Global Sustainability track. She is passionate about climate justice, environmental justice, food systems and food sovereignty. Kathia enjoys hiking, reading, watching movies, traveling, taking road trips and tasting plant based dishes.

Tori DePauli 2021-2022

Tori is from St. Louis, Missouri. She earned her B.S. in Parks, Recreation and Tourism in 2018 from the University of Missouri-Columbia with plans to focus on Recreational Health and Wellness programming. She has experience as a teacher and camp counselor to children of all ages and abilities. Tori enjoys spending time outdoors, practicing yoga, listening to music, reading and being with friends, family and animals. She is currently serving in Hotchkiss, Colorado, with the Delta County School District as the Farm to School Program Coordinator. During her year as a VISTA member, she will be developing and coordinating the implementation of K-5 nutrition and academic-based garden curriculum, recruiting and engaging community volunteers, raising funds and creating sustainable solutions to ensure that this program can continue to promote healthy lifestyles and increase access to healthy, local foods for all families. 


Sarah O'Connell

Sarah is from Stroudsburg, Pennsylvania. She earned her B.S. in Biobehavioral Health from Penn State University with a minor in Psychology. She has experience working with students of all ages as an ESL teacher and a camp counselor. Sarah enjoys hiking, backpacking, reading, and running. She is currently serving in Hotchkiss, Colorado with the Delta County School District as the Farm to School Program as the Garden Educator. During her time as a Farm to School member she will be helping to maintain the gardens at each school, developing and teaching nutrition lessons for the K-5th graders, facilitating farmers markets, and leading one of our garden clubs.
