This course explored the human body. The course focused on explaining major body systems by looking at organ composition and cellular functions. The laboratory portion allowed students to study human cadavers which gave first-hand experience of the major body systems, muscular system, and skeletal system. This course was a two semester class.

An assignment of this course was to explain within a cellular level why two patients of two different case studies died.

Case Studies Final Paper

This course was an overview organic chemistry and biochemistry. It explained the composition of organic molecules and the chemistry of lipids, protein, and carbohydrates. It was a beneficial introductory course to Food Science and Advanced Nutrition as many topics overlapped.

Medical terminology was a course that explored the prefixes, bases, and suffixes derived from Greek and Latin sources. The course was presented to students by having the medical terminology grouped by major body systems.

This was an introductory course of statistics that provided information on regression and log-linear models. The examples often pertained to medical examples and cases studies and allowed students to practice observing data. This course will be beneficial when examining data from research.

This course explored the various affective disorders, psychoses, substance use disorders, personality disorders, mental disabilities and treatment approaches. These topics were presented to students through cases studies or lectures. This class explained pertinent information to nutrition and dietetics as the course provided in-depth information on eating disorders.

An assignment for this course was to create a case study focusing on a disorder for other students to study. The assignment included historical research, etiology of the disorder, and treatment of the disorder.
