STEP 1: Take the temperature of cooked foods
A. Using a calibrated, sanitized probe thermometer, insert to the deepest part of the food (ex. close to the bone for chicken thighs or middle of the pan for rice) immediately after removing the food from heat application. Wait at least 15 seconds for the temperature reading to stabilize
Tips:
make sure to choose the largest portion in a given batch (ex. the 8 oz. chicken breast vs. the 7.5 oz chicken breast)
probe items in the middle of a sheet tray (heat transfers unevenly - food on the edges of a sheet tray or hotel pan will reach different temperatures at different times compared to portions in the middle)
B. Proper temperatures:
IF the food does not meet or exceed the required final cooking temperatures, you must continue cooking until proper temperatures are achieved

Temperatures should be taken per batch - if you’re cooking 20 sheet trays of chicken breast in 2 different ovens, 2 SEPARATE temperatures should be documented
