We detect smell with our nose. The olfactory cells detect the smells and the olfactory nerve sends the information to the brain.
Taste

We detect flavours with our tongue. The little pink bumps in the tongue are called taste buds. They detect flavours (sweet, salty, bitter and sour) and send the information to the brain through the gustative nerves.
