Ingredients:
- 1/2 kilo chicken, cut into pieces
- 1 small can evaporated milk
- 1 calamansi
- 1/4 cup water
- 1/2 cup flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg (beaten)
- cooking oil
Instructions:
- Mix the milk with the water and the juice of the calamansi and use this as a marinate for the chicken. Leave for at least 30 minutes.
- Mix the flour, salt and pepper together
- After marinating, dip each chicken piece in the egg then coat evenly with the flour-salt mixture
- Fry all pieces in a pan with a generous amount of cooking oil until all sides are golden brown. You will need to rotate the pieces periodically to avoid burning the batter.
- Drain the excess oil using a paper towel and serve.
