Ingredients

    • 2 parts (by weight) roselle fruit, washed and deseeded
    • 1 part water
    • ¾ part sugar

To Prepare

    1. Deseed each roselle fruit by slicing off the stem...
    1. ...and pushing (with a finger or chopstick) the seed forward...
    1. ...until it pops out and the fruit looks like this...
    1. Bring the water to a simmer, add the fruit (no seeds), and continuously stir (the flesh will begin to melt rather quickly)...
    1. Once the flesh has melted (or mostly melted), add the sugar and cook until dissolved
    2. Pour into jars and let cool...
