Ingredients

  • 1 lb dark brown sugar
  • 1 cup sugar
  • ½ tsp salt
  • ¾ cup milk (or soy milk)
  • 3 cups pecan halves
  • 2 T butter
  • ½ tsp vanilla extract

To Prepare

    1. Mix the sugars, salt, and milk in a saucepan
    2. Cook the mixture on medium heat, without stirring, until the temperature reaches 234 degrees Fahrenheit
  1. Add pecans, bring to a rolling boil, and remove from heat
  2. Add the butter and vanilla, but do not stir
  3. Allow the mixture to cool inside the saucepan until about 220 degrees Fahrenheit, then beat with a wooden spoon until it loses some gloss
  4. Allow the mixture to continue cooling until it begins to feel less soupy (the whole cooling-beating-cooling process should take about 5 minutes)
  5. Quickly drop by spoonfuls onto wax paper / parchment paper / aluminum foil
  6. Cool 20 minutes
