Ingredients
- 1 lb dark brown sugar
- 1 cup sugar
- ½ tsp salt
- ¾ cup milk (or soy milk)
- 3 cups pecan halves
- 2 T butter
- ½ tsp vanilla extract
To Prepare
- Mix the sugars, salt, and milk in a saucepan
- Cook the mixture on medium heat, without stirring, until the temperature reaches 234 degrees Fahrenheit
- Add pecans, bring to a rolling boil, and remove from heat
- Add the butter and vanilla, but do not stir
- Allow the mixture to cool inside the saucepan until about 220 degrees Fahrenheit, then beat with a wooden spoon until it loses some gloss
- Allow the mixture to continue cooling until it begins to feel less soupy (the whole cooling-beating-cooling process should take about 5 minutes)
- Quickly drop by spoonfuls onto wax paper / parchment paper / aluminum foil
- Cool 20 minutes
