Valorization of Rosemary Solid Waste: Exploring phenolic biotransformation across digestion and fecal fermentation phases
The WasteDigest project addresses important and novel research challenges in the agri-food sector, including valorization of solid waste (SW) from essential oil production, phenolic bioaccessibility, biotransformation during digestion and in vivo antioxidant activity. The results will contribute to the development of essential functional food ingredients and sustainable packaging materials. Additionally, the project promotes sustainable food waste management, a zero-waste approach and a broader application of valorization processes for other SWs from agri-food industry.
