Raita

The closest approximation in western cuisine is a side dish or dip, or a cooked salad.
Chutneys
A chutney is a family of condiments or sauces in the cuisines of the Indian subcontinent. Chutneys may be realized in such forms as a tomato relish, a ground peanut garnish, yogurt or curd, cucumber, spicy coconut, spicy onion or mint dipping sauce. From tamarind to mint, chutneys are a favorite addition to snacks like masala dosa or samosa—many Indian families even mix their mint chutney with ketchup, to be eaten with samosa or dahi toast (which features a raita-esque yogurt filling).
Achaar
As the staple pickle of India, achaar comes in many varieties. Made from either a fruit or a vegetable, achaar brightens up anything from rice to yogurt to dal, and is ever-present at the Indian table. The classic is a spicy mango achaar, which varies in heat and spice from state to state but brings a reliable sweet-sour profile.
Butter chicken
Butter chicken is a curry of chicken in a spiced tomato, butter and cream sauce. It originated in the Indian subcontinent as a curry.

History
The history of the Indian language branch is often divided into three main stages:
Old, comprising Vedic and classical Sanskrit
Middle, which embraces the vernacular dialects of Sanskrit called Prakrits, including Pali
New, which comprises the modern languages of the northern and central portions of the Indian subcontinent.

The government of India recognizes 112 mother tongues that have more than 10,000 speakers. India has a total of 1,652 different languages and dialects
The Rig Vedic Sanskrit is the oldest attested member of the Indo-European language family. The discovery of Sanskrit by early European explorers of India led to the development of comparative Philology.
Vedic Sanskrit, the language used in the Vedas, the sacred Hindu scriptures, is the earliest form of Sanskrit.
Two major varieties of Hindi are spoken; Western Hindi, which originated in the area around Delhi and Eastern Hindi which is spoken mainly in central Uttar Pradesh and eastern Madhya Pradesh. The dialect that has been chosen as India’s official language is Khariboli in the Devnagari script. Other dialects of Hindi are Brajbhasa, Bundeli, Awadhi, Marwari and Bihari (Bhojpuri, Maithili and Magadhi).
