Nathanael aka "resident tech guy" is big into syncing. He had to pry my fingers off of my paper planner/calendar and argue the merits of phone calendars (so much more efficient for communicating schedules). Equally challenging was training me to use the virtual shopping list, which then either one of us can access, if we happen to be near the grocery store. This list has a couple of things that work to it's detriment...
1. If my phone runs out of batteries as I'm shopping... bad news.
2. I have to remember to check off or delete items I've already bought so we don't have twice as much of something random, like Brussel sprouts.
3. There is no control over which store things are purchased at... in this case Costco.
Nathanael kindly offered to go to Costco to fill up my car with gas, and also to pick up a few things on the list. I had forgotten that I had put potatoes on the list. He came home with a 20 lb. bag. It reminded me of that scene in "Anne of Green Gables" where Matthew wants to buy Anne a dress with puffed sleeves, but is too shy to tell the shopkeeper, so ends up buying a rake and 20 lbs of brown sugar, much to Marilla's consternation. Substitute sugar for potatoes, and pretty much the same scenario.
Not only was it a lot of potatoes, look at the size of these things! Literally as big as my foot! I don't even want to know what was used to water them....
And now to figure out what to do with 20 lbs. of potatoes before they turn green and sprout. I wrote down some ideas:
Being more of a rice eating family than a potato eating one, I found this very challenging!
Potato Soup is a family favorite and I had most of the stuff except the green onion/parsley topping, so I substituted roasted asparagus instead. Thumbs up from the family on that one. (Only used 4 potatoes)
Shepherd's Pie, (the reason potatoes were on the shopping list in the first place) in double quantity, since my in-laws were coming over for dinner. Meira picked out all the peas. Boo. Made two Kitchen Aid bowlfuls of mashed potatoes (used 6 potatoes) and now I have a large container of mashed potatoes leftover to make potato pancakes... maybe tomorrow? Gotta space out the starch consumption!
Planning to do the potato bar sometime this week (should use another 5 potatoes). In the meantime, PLEASE, I'm begging you, text me your favorite potato recipe ASAP! Better yet, come over, I'll give you a potato or two... should be enough to feed your entire family!
Two days later... I ended up making the potato pancakes and the kids loved those too even with the green onion incorporated into the batter. A bit like potato latkes.
... and two weeks later...
finally used the last 6 potatoes. Made rich and labor intensive scalloped potatoes to go with a glazed ham and green beans... a celebratory dinner... Woo Hoo! WE'VE FINISHED THE POTATOES!!!!
