INGREDIENTS
1 (13.5 oz) can coconut milk
¼ cup coffee concentrate (see notes for caffeine-free options)
¼ cup pumpkin purée
2 tablespoons pure maple syrup
½ teaspoon vanilla extract
½ teaspoon pumpkin pie spice (see notes for homemade blend)
¼ teaspoon pink Himalayan salt
½ cup chia seeds
INSTRUCTIONS
In a high-speed blender, combine coconut milk, coffee concentrate, pumpkin purée, maple syrup, vanilla, pumpkin pie spice, and salt. Blend on high for 10–15 seconds until smooth.
Add chia seeds to the blender and blend on the lowest setting for 10 seconds. Let sit for 5 minutes to thicken slightly, then blend again for another 10 seconds.
For a completely smooth, pudding-like texture, blend on high for 30–35 seconds.
Pour into a glass container or jars and refrigerate for at least 4 hours, or overnight for best results.
Stir before serving. Top with a sprinkle of cinnamon, crushed pecans, or a swirl of coconut cream for an extra treat.
