INGREDIENTS
128 grams cassava flour, about 1 scant cup
1 cup water
3 tablespoons avocado oil or olive oil
½ teaspoon mineral salt, optional but recommended
INSTRUCTIONS
Preheat the oven to 350°F and line a large baking sheet with parchment paper.
In a medium bowl, whisk together the cassava flour, water, oil, and salt until smooth. The batter will be pourable, not dough-like.
Pour the batter onto the prepared baking sheet and spread it into a thin, even layer, covering most of the parchment paper.
Bake for 20 minutes. Remove from the oven and carefully score or cut the crackers into squares using a pizza cutter, knife, or pastry cutter.
Return the baking sheet to the oven and bake for another 25–30 minutes, or until the crackers are golden and crisp.
If the outer crackers brown faster than the center pieces, gently break those off and let them cool while the remaining crackers continue baking.
Transfer the crackers to a cooling rack or cutting board and allow them to cool completely before breaking apart along the scored lines.
RECIPE NOTES/TIPS
The thinner you spread the batter, the crispier the crackers will be.
These are best fully cooled before storing, as they continue to crisp as they cool.
Avocado oil has a more neutral flavor, while olive oil gives a slightly richer taste.
