In this chapter, we will share the Sequence of Service that is widely accepted and used in FB industry. Every restaurant might have slightly different sequence depending on each business' nature. Some are formal, some other are more casual.
Bear in mind that Sequence of Service is not something rigid - you can adjust it with one mission: to enhance your guest's dining experience.
Stand properly at door entrance assigned, and facing to the guests flow.
"Good morning/afternoon/evening, Ma'am/Sir….."
All Server must know the seating arrangement / table lay out.
“Please follow me"
"This way please"
"Your table is over there"
Stand properly at station assigned, and facing to the guest entrance. Pull the Chair and push back when the guest has seated.
"This is your table. Please have a seat Ma'am/Sir…"
Pick up the napkin by one corner and shake it out into a triangle.
“Excuse me…May I unfold your napkin?”
Always offer guest a drink before offering foods. Why?
Drink is generally served faster than foods, so the Guest can enjoy the drink while ordering or waiting for the food to be served.
"Would you like something to drink? We have Equil, Aqua reflection, and San Benedeto. Which one would you prefer?"
Serve bread from the guest's left side.
Adjust your position to the table set up. You can always serve from the other side if serving from the left is not possible.
“Excuse me Ma'am/Sir. Allow me to show you our bread selection (mention the breads selection). Which one would you prefer?"
Mention the name, type of grape and vintage (the year) while showing the bottle label to the Guest.
Remember to always pour wine with the label facing the Guest.
“Excuse me Mam/Sir, would you like to have red or white wine at this moment?”.
Always mention the quantity (if more than one) and the product's name .
“Excuse me Ma'am/Sir, this is your Spaghetti Carbonara as your dinner. Please enjoy”.
“Excuse me Ma'am/Sir, here are three Mushroom Soup as your appetizer. Please enjoy”.
Always pay attention to your Guest's table. Offer to remove unused glasses, plates and cutleries.
" Excuse me. May I remove your plate Ma'am/Sir?"
You can offer dessert and coffee/tea while clearning up the table. When serving, pour the coffee/tea from the right side of guest.
"Do you have a room left for dessert, Ma'am/Sir? We have our favorite dessert of Chocolate Dome and Cheese Soufflé".
"Would you prefer coffee or tea?"
Present the check with a bill cover and process the payment shortly.
