Learning about Fresh Milled Flour
Fresh milled flour is in it's purest state.
With all of the latest diet trends, many seem to have placed a negative stigma on bread. However, what most people have been eating are really refined, fast-process breads that don’t have any nutritional value.
When your take the time to mill your own flour, depending on what grains you will use and which kind of bread you’ll make, you will get a very unique flavorful, really digestible, and highly nutritious loaf of bread in the end.
In freshly milled flour the bran is packed with fiber and the wheat germ is the vitamin and mineral rich embryo of the kernel. Wheat germ is full of vitamin B6, folate, thiamin, zinc, magnesium, manganese, and vitamin E. Commercially milled flour removes 30% of the wheat kernel, inadvertently removing the most nutritious part of the grain to make a fluffy white flour.
This is why cereals and breads at the store have a nutrition labels that boast "fortified with iron, thiamine, etc..." They took out the natural nutrients and replaced it with man-made dupes.
Fresh milled flour can contain 40 of the 44 nutrients that the body needs. Once milled, flour begins to slowly oxidize and degrade. Oils can turn rancid, and vitamin levels decline. Even when stored properly, nutrients decrease over time.
