Basic Info
Course Description
Physiological, psychological and practical aspects of obtaining a healthy diet. Relationship of nutrients to health and well being. Evaluation of current nutritional issues and controversies.
This is a fully online, 8 week course. The course resides on the course management system Canvas. It is accessible from MyPortal. It begins Monday May 6 and ends Thursday June 28
But... it will open 4 weeks early, on the first day of Spring quarter (Monday April 8) for those who want to get a head start
This is not a self-paced course. But....since you'll be able to log onto the course early you CAN do some of the tasks during those 4 weeks. However, you won't be able to take the tests until the course officially begins
Important - Know This!
Faculty are required by law to clear their rosters of “no shows” during the first week.
To keep your spot in this class and not be identified as a “no show” and therefore dropped, log onto the course on Canvas and complete the following 2 quick and easy tasks by midnight WEDNESDAY night of the first official week of this course:
Task #1: Fill out a short questionnaire (Welcome to Nutrition 10 Survey). Doing so will earn you 5 points.
Task #2: Take a short quiz: What Do You Know About Nutrition? Doing so will earn you 5 points. (All answers get credit!)
FYI: Students who add the class after registration closed will have 2 days to do these tasks, after they register.
Not doing these 2 tasks by the deadline will get you dropped as a “no show”. Get in touch with me in the first few days of the quarter if there is a hardship that prevents your completing these 2 quick tasks.
Need Accommodations in This Course?
Students with limitations due to a disability may receive support services from DeAnza's Disability Support Services. Those students with mobility, visual, hearing, speech, psychological and other other health impairments as well as learning and developmental disabilities are served. Register with their offices in the first week of the quarter to receive accommodations in time for the first test.
Be Aware
The last day to drop with a “W” is Friday June 14th (this is later than for "regular" classes at DeAnza)
If you realize after this date that you are not getting the grade that you desire, please do not ask me to drop you. College procedures do not allow me to do so. Know your grade throughout the course so there are no surprises in the last week of the quarter.

NOTE: There will be NO assigned readings from this OER. It is totally optional.

Evaluate a meal plan or a diet for meeting the criteria of a healthy diet
Evaluate nutrition claims about a dietary supplement, food or diet for accuracy and health-enhancing potential
Components of Nutrition 10
Virtual Lectures
The backbone of Nutrition 10 consists of 11 Virtual Lectures (VLs) -- something that I have created. These are NOT videos of your instructor giving a lecture. A VL is a something that you read (although there are a few short videos embedded within some VLs). Essentially, a VL replaces what a student would get in 4 hours of class time/lecture in an in-person format of this course, but in a visual presentation. This makes up the course content.
Recorded 1 hour "Mini-Lectures"
Your instructor has recorded and posted a 1 hour "Mini-Lecture" for you to watch each week. They include explanations of some of the more challenging topics from that week's Virtual Lecture. No new material will be presented. They are offered to help you "get" some of the more complex material presented in the Virtual Lectures. Plan to watch all of them, from beginning to end, at least once (better, watch them twice. Repetition helps promote learning). Take notes while you watch.
Be clear: They do no replace reading the Virtual Lectures.
Worksheets and Practice Quizzes
There will 6 Worksheets posted on Canvas. They are designed to help you in your process of learning. Fill them out and submit them. And be sure you check the answer key to a worksheet once it's posted (after you've tried to fill it out). Even those the worksheets do not earn points, doing them will help you do well on the corresponding test.
There will also be a handful of Practice Quizzes posted. Taking a practice quiz is not required and your score is not recorded. But it's a good idea to take all of them. They will help you do well on the corresponding test.
Asynchronous Discussions
10 points are earned through participating in 2 Asynchronous Discussions; each earns up to 5 points. To earn the full 5 points, you must submit:
1 POST that is complete (all questions answered), on topic (not drifting off topic), clearly written and meet the word count. Worth 3 points
2 REPLIES (a REPLY to 2 classmates). Worth 1 point for each
In order to earn 10 Points for Discussions, you must participate on both discussions and earn 5 points for each. These points are NOT Bonus Points. They are part of the total points for this course.
Each Discussion will be open for 10 Days -- from Friday morning until Sunday night.
Tests
General Information
You will take all tests on Canvas.
Each Test is 25 questions, a mix of true/false, multiple choice and short answer questions.
Test questions are taken from the Virtual Lectures (including embedded videos and website links).
Think of a Test as a long quiz or short exam. They occur often to help you to stay on track :-)
You will have a maximum of 35 minutes to take each Test
A Test will be open for 18 hours: From 6 am until that night at 11:55 pm
The Tests take place be different days of the week, depending on the test. The dates are below -- Mark your calendar!
There are no make-up tests. If you miss a test, that is the one that is dropped. If you miss 2, one score of 0 will be included in your points
Study Guides for each test will be posted on Canvas. USE THEM. Don't just look at a Study Guide -- USE it. Find the answers to the questions.
All Tests are open book/open notes. However you STILL must study and prepare. You will not have enough time to look up every question.
You can take each Test twice. The higher score is the score that is kept. Plan to take a Test early enough that you can take it again if you want to.
The lowest score of the 7 Tests will be dropped from your cumulative score. Thus, if you take Tests 1-6 and are happy with your scores, you don’t need to take Test 7.

The Diet Assignment
The Diet Assignment is worth 50 points. Besides earning points, it has the potential of being personally relevant to you and your family.
An Overview
This assignment is divided into 2 Parts.
For Part 1 you will track what you eat and drink for 3 days on Cronometer.com, and generate an analysis. It is worth 20 points and is due at the end of Week 4.
For Part 2 you will answer a series of questions and write a report in which you evaluate your diet. It is worth 30 points and is due at the end of Week 6
Your grade on the Diet Assignment is NOT related to the nutritional quality of your diet in any way. Your grade is totally based on how you completed the tasks.
It is recommended you approach this assignment with an open mind and curiosity--not with fear of what you’ll learn. This is a judgment-free assignment (and a judgement free course)
Late Assignments will be Accepted (with a late penalty)
Assignment will be accepted late, but with a penalty: A deduction of 10% of the points. If you submit both Parts 1 & 2 late, that drops your grade one full letter grade.
The late penalty is an incentive for you to submit it on time
ADVICE: If getting an A is your goal, plan ahead to finish the Diet Assignment by the due date.
