This is a fully online, 8 week course. The course resides on the course management system Canvas. It is accessible from MyPortal. It officially begins Monday May 4 and ends Thursday June 24
But... it will open a full 4 weeks early, on April 6 for those who want to get a head start
This is not a self-paced course. But....since you'll be able to log onto the course early you CAN do some of the tasks during those 4 "pre" weeks. However, you won't be able to take the tests until the course officially begins
Faculty are required by law to clear their rosters of “no shows” during the first week.
To keep your spot in this class and not be identified as a “no show” (which gets you dropped) log onto the course on Canvas and complete the Welcome to Nutrition 10 Survey by Thursday night (11:55 pm) of the first official week of this course. Filling out this survey requires that you leave a VIDEO COMMENT of yourself answering 2 questions.
FYI: Students who add the class after registration closed will have 2 days to do this, after they add.
Not doing this task by the deadline will get you dropped as a “no show”.
Get in touch with me in the first few days of the quarter if there is a hardship that prevents your completing this quick and easy task.
Students with limitations due to a disability may receive support services from De Anza's Disability Support Services. Those students with mobility, visual, hearing, speech, psychological and other other health impairments as well as learning and developmental disabilities are served. Register with their offices in the first week of the quarter to receive accommodations in time for the first test.
The last day to drop (with a “W”) is Friday June 12th (this is later than for "regular" classes at De Anza)
If you realize after this date that you are not getting the grade that you desire, please do not ask me to drop you. College procedures do not allow me to do so. Know your grade throughout the course so there are no surprises in the last week of the quarter.

Upon completing this course successfully you will be able to:
Evaluate a meal plan or a diet for meeting the criteria of a healthy diet
Evaluate nutrition claims about a dietary supplement, food or diet for accuracy and health-enhancing potential
The backbone of Nutrition 10 consists of 11 Virtual Lectures (VLs) -- something that I have created. These are NOT videos of your instructor giving a lecture.
A VL is a something that you read (although there are a few short videos embedded within some VLs).
Essentially, a VL replaces what a student would get in 4 hours of class time/lecture in an in-person format of this course, but in a visual presentation. This is an essential component of the course content of Nutrition 10.
Your instructor has recorded and posted a 1 hour "Mini-Lecture" for each of the Virtual Lectures. They include explanations of some of the more challenging topics from that Virtual Lecture. No new material will be presented. They are offered to help you "get" some of the more complex material presented in the Virtual Lectures. Plan to watch all of them, from beginning to end, at least once (better, watch them twice. Repetition helps promote learning). Take notes while you watch.
Be clear: They do no replace reading the Virtual Lectures.
There will 6 Worksheets posted on Canvas. They are designed to help you in your process of learning. Fill them out and submit them. And be sure you check the answer key to a worksheet once it's posted (after you've tried to fill it out). Even those the worksheets do not earn points, doing them will help you do well on the corresponding test.
There will also be a handful of Practice Quizzes posted. Taking a practice quiz is not required and your score is not recorded. But it's a good idea to take all of them. They will help you do well on the corresponding test.
5 points will be earned for participating on one asynchronous discussion in the first half of the quarter. Full participation (following all prompts) is required to earn full points.
Know that these points are NOT Bonus Points. They are part of the total points for this course.
You will take all tests on Canvas.
Each test is 20 questions, a mix of true/false and multiple choice questions.
Test questions are taken from the Virtual Lectures (including embedded videos and website links).
Think of a Test as a long quiz or short exam. They occur often to help you to stay on track 😊
You will have a maximum of 20 minutes to take each Test
All tests are open (paper) notes, but NOT open internet or open computer. Using AI or other online resources while taking a test is not permitted. Using notes you created on your computer is not permitted. You CAN use all the notes ON PAPER that you wish. Canvas exam logs will be checked. Navigating away from the test (to go elsewhere on your computer or on the internet) is recorded.
Even though all tests are open notes you absolutely need to study and prepare for the tests. Your notes can definitely help you but will not replace the process of learning the course content and studying
A test will be open for 18 hours: From 6 am until that night at 11:55 pm
The tests take place be different days of the week, depending on the test. The dates are below -- Mark your calendar!
There are no make-up tests. If you miss a test, that is the one that is dropped. If you miss 2, one score of 0 will be included in your points
Study Guides for each test will be posted on Canvas. USE THEM. Don't just look at a Study Guide -- Find the answers to the questions.
The lowest score of the 7 Tests will be dropped from your cumulative score.
Thus, if you take Tests 1-6 and are happy with your scores, you don’t need to take Test 7 😊
Or if something comes up and you miss a test, don't worry -- you can STILL earn an A in Nutrition 10.

The Diet Assignment is worth 200 points. It makes up the greatest portion of points in determining your course grade. (57%, to be precise)
To earn an A in Nutrition 10, plan to devote enough time, energy and mental to do a thorough and complete job on all of the assignment tasks.
Besides earning points, it has the potential of being personally relevant to you and your family.
This assignment is divided into 6 Parts:
For Part 1 (30 points) you will track what you eat and drink for 3 days on a provided form (3-day Food Record), and afterwards, explore your eating habits by answering a series of questions.
For Part 2 (30 points) you will input the foods and beverages from your 3-day Food Record (your Part 1) onto a free internet nutrient analysis program, and generate a nutrient analysis.
For Parts 3, 4 & 5 (each is worth 30 points) you will assess and evaluate your diet by answering questions and filling out some charts.
For Part 6 (50 points) you will summarize your evaluation, suggest modifications and share final reflections.
Your grade on the Diet Assignment is NOT related to the nutritional quality of your diet in any way. Your grade is totally based on how you completed the tasks.
It is recommended you approach this assignment with an open mind and curiosity--not with fear of what you’ll learn. This is a judgment-free assignment (and a judgement free course)
Each part is due on different days of the week. Mark your calendars. Seriously, folks.

Submissions after 5 days from the due date will NOT be accepted
There will a 10% deduction of points for any of Part that is submitted late
The deduction in points is not a punishment. It is an incentive for you to submit on time 😊
ADVICE: If getting an A is your goal, plan ahead to submit each part by the due date
If you receive a low score on Pars 1 and/or Part 2, carefully read the comments/feedback I've left for you. You can REVISE your work and RESUBMIT to raise your score. Use the feedback to make accurate and complete revisions.
The deadline to resubmit Part 1 or Part 2 is 5 days AFTER your original submission's score was posted.
Because Parts 3,4,5 & 6 are all based on the work you've done on Parts 1 & 2, it's super important that you complete the tasks of Parts 1 and 2 by carefully following the instructions and paying attention to details in the instructions AND in your work.
Inaccurate work on Parts 1 & 2 will mean the assessments you make in the subsequent parts won't accurately reflect your diet. And that means your work won't be personally relevant.
